Three Easy-Peasy Dinners Under 400 Calories

Hello again!

As I’ve mentioned a few times, I find it so so hard to keep my weight down when I’m in NY. The food here is just way too yummy and I want to eat everything🙈

But, Sean and I are both trying to get our summer bodies on point so I’ve been cooking a lot lately and I thought I’d share three of my favourites that are super easy, super yummy and best of all, under 400 calories!

Chicken Fajitas

This is one of my favourites as you can literally make it in under 20 minutes. Mexican food is also my all time favourite so when I’m dieting this is always a go-to!

Keep this under 400 calories:

Bulking with peppers & onions

Opt for light mayo instead of sour cream

Use 1kal/Pam instead of oil

Wrap with lettuce

Stuffed Peppers

The best thing about stuffed peppers is that you can pretty much stuff them with anything you like! But to keep it low kcal, stick with mostly veggies and white meat.

Keep this under 400 calories:

Stuff with cauliflower rice

Use 1 Kcal/Pam

If you’d like to add cheese, tear up a 50 kcal single cheese slice and melt on top of stuffed peppers.

Eat no more than 3 stuffed peppers (trust me, it’s way more than enough!)

Chicken Burgers

This one is a favourite of Sean’s (I also looooveeee it!) There is literally no taste lost by sticking to the suggestions below.

Keep this Under 400 calories:

Use sandwich thins (150 kcals or less)

Make your own chicken (or turkey) patties. Add tiny pieces of peppers, onions and chili’s to the mix to bulk them up. Season how you like!

Wrap patties in foil and roast in the oven (no need for oil and they come out so much juicier!)

Use light mayo

Fry onions is 1kcal/Pam spray

Opt for 50 kcal single slice cheese (it tastes just as good once melted into the bread!)

Add any veggies you like and… voilà!

And there you have it, three really easy healthy meals you can prepare for under 400 kcals!
